Honduras Norma
Norma Iris Fiallos owns the farm San Rafael, located in the Los Limos area of Corquin, Copan.
Norma inherited the farm in 1982, and today she is a member of the Aruco cooperative, which provides support at all stages of growing micro-lots.
Norma is one of the most innovative producers in the area, with a vast array of different coffee varieties on her farm, including bourbon, catuai, maragogype and parainema.
Together with her family, she researches the best management practices on coffee plantations and implements them on her plot.
The farm, San Rafael, is nestled within a pine forest, this is what gives the coffee its very unique cup profile. The coffee is completely shade grown and the production area represents a fraction of Norma’s land.
Within its farm, Norma aims to create an open tourist space that will be a haven for coffee travellers from around the world.
